Hello I hope you have enjoyed this summer as much as I have. I've about grilled myself out. This month I have five new recipes to share with you including: - Chicken Kabobs =+=-=+=-=+=-=+=-=+=-=+=-=+=-=+=-=+=-=+=-=+=-=+=-=+=-=+=-=+= "How Did Beyonce Knowles Lose 20 Pounds in 14 Days?" Beyonce Knowles announced on the Oprah Winfrey show that she had lost 20 pounds in only two weeks to prepare for her starring role in the film Dreamgirls. Here's how Beyonce Lost the Weight! =+=-=+=-=+=-=+=-=+=-=+=-=+=-=+=-=+=-=+=-=+=-=+=-=+=-=+=-=+= Chicken Kabobs 1/2 cup soy sauce 1. In a large bowl, whisk together soy sauce, water, Worcestershire sauce, vegetable oil and ground mustard. Before adding chicken set aside a small amount of marinade to brush onto kabobs while they cook. Place chicken, zucchini, onion, green pepper and pineapple in bowl with marinate and coat well. Cover bowl with plastic wrap and refrigerate overnight. 2. Preheat charcoal grill for high heat. 3. Drain marinade from the chicken and vegetables. Discard the drained marinade. 4. Using 4 skewers, thread chicken, zucchini, onion, green pepper and pineapple alternately until you have 4 or 5 pieces on each skewer. 5. Lightly oil grill grate before placing skewers on grill. Place skewers on grill and cook for 12 to 15 minutes, until chicken juices run clear. While grilling turn and baste kabobs with the reserved marinade. When kabobs are done remove from skewers and serve immediately. In the event you prepare this recipe the day of, just marinate the chicken and vegetables in the refrigerator at least 2 hours before grilling. Makes 4 servings. =+=-=+=-=+=-=+=-=+=-=+=-=+=-=+=-=+=-=+=-=+=-=+=-=+=-=+=-=+= Chicken Creole Non-stick spray coating 1. First coat non-stick deep skillet with a light coat of cooking spray. Over medium-high heat cook and stir raw chicken for 5 to 10 minutes or until chicken is no longer pink. 2. Reduce heat then add diced tomatoes with juice, green peppers, chili sauce, celery, onion, garlic, basil, parsley, salt and red pepper. 3. Bring chicken creole to a boil, reduce heat and simmer covered for about 10 minutes. Serve over steaming hot rice. Makes 4 servings / Serving size is 1-1/2 cups. =+=-=+=-=+=-=+=-=+=-=+=-=+=-=+=-=+=-=+=-=+=-=+=-=+=-=+=-=+= Catfish Stew 1 lb catfish fillets, cut into 2 inch lengths Catfish Seasoning Mixture Ingredients: 1/4 cup paprika 1. In a large pot combine the following ingredients potatoes, diced tomatoes, clam juice, chopped onions, water, and garlic. Bring pot to boiling. Reduce heat and cook covered over medium-low heat for about 10 minutes. 2. Coat catfish fillets evenly with seasoning mixture and add to pot. Continue to bowl stew covered for 5 to 10 minutes, until fish flakes easily with a fork. 3. Serve cat fish stew over a bed of hot steamed rice. Makes 4 servings. =+=-=+=-=+=-=+=-=+=-=+=-=+=-=+=-=+=-=+=-=+=-=+=-=+=-=+=-=+= New Orleans Style Red Beans and Rice 1 lb dry red beans 1. Sort through your beans removing any defective beans or small stones that may be present. Place the beans in a colander and rinse several times. 2. Place beans, chopped onion, chopped celery, and bay leaves in a 5-quart pot and cover with two inches of water. Bring to boil, replace lid and reduce to low-heat. Cook for about 1-1/2 hours until beans are tender. When beans are tender remove bay leaves then mash and stir beans against side of pot. 3. Next add your remaining ingredients consisting of chopped green peppers, parsley, garlic, thyme, salt and pepper. Cook uncovered over low-heat for about 30 minutes, until red beans mixture is creamy. 4. Serve red beans over steamed rice. Makes 8 servings. =+=-=+=-=+=-=+=-=+=-=+=-=+=-=+=-=+=-=+=-=+=-=+=-=+=-=+=-=+= Beef Kabobs 1 lb stew beef meat, cut into 1 inch thick cubes 1. In a large mixing bowl whisk together teriyaki sauce, red wine, Worcestershire sauce and garlic salt. Before adding beef set aside a small amount of marinade to brush onto kabobs while they cook. Place stew meat, pineapple, green pepper and onion into bowl and coat generously with marinade. Cover bowl with plastic wrap and refrigerate overnight. 2. Preheat charcoal grill for high heat. 3. Drain marinade from the beef and vegetables. Discard the drained marinade. 4. Using four skewers, thread beef, green pepper, pineapple and onion alternately until you have 4 or 5 pieces on each skewer. 5. Lightly oil grill grate before placing skewers on grill. Place skewers on grill and cook for 12 to 15 minutes, until kabobs are done. While grilling turn and baste kabobs with the reserved marinade. When kabobs are done remove from skewers and serve immediately.
