I've tried for years now to find the Bitter turnip greens I grew up with. How did the agriculturist manage to change or take the bitterness out of such a delicious Bitter vegetable and why?

I limit the water i boil my greens in and i only cook them until tender. Most importantly i find the smaller the leaves the stronger the taste. *for the ones who love the taste of bitter greens!

I have my own garden and what I do is clean my greens blanch them and freeze them for later use so I've noticed that when I feel like making a pot they are never bitter. But if you just bought some greens and want to cook them a teaspoon of sugar will do. But not a whole cup, greens are not kool aid.

My sister-in-law sneaked some kale in a pot of turnip greens she cooked for us and they were the best I'd ever eaten. My mother always added a dash of sugar to any vegetable or tomato dish and a dash of salt to anything sweet.

Try Bragg Liquid Aminos. It knocked the bitter tast out of Turnips and Kale. Also, try adding a little Olive Oil.😊

Add a whole clean pecan to your pot of any bitter greens while cooking....no bitter taste whatsoever. This was handed down in our family for at least 6 generations.

Thanks for sharing this wonderful tip. Although I rarely prepare turnip or mustard greens because of their sometime bitter taste, I'll have to try preparing these delicious greens again now that I know your family secret. Now I really am looking forward to my next pot of turnip greens.

Bitter tasting turnip greens are the best of all. I had Bitter turnip greens with corn meal dumplings, years ago when I visited Southwest Arkansas. I would love to find them closer to my home in Chicago Illinois.

I know this isn't the answer to the question but I eat sauteed kale and Swiss chard. Similar to greens but not as much work and no bitterness.

I know of two ways to cook turnips that will not be bitter. The easiest method would be to place a potato in the water while the turnip greens boil. The potato will absorb the bitterness from the greens rendering them just right for eating.
The second option, is to change the water a few times, discarding the old and replacing with fresh water -- this to removes the bitterness from turnips.
