Homemade Black Beans Recipe
1 bag dried Black Beans
1 large green pepper
1 large onion
6 cloves of garlic
3 tablespoons of olive oil
1 large bay leave
1 teaspoon salt
1 tablespoon black pepper
Rinse beans well and drain. In a large pot, put in beans and cover with cold water. Let sit for 1 hour. Drain and fill with water almost about 2 inches from top of pot.
Clean pepper, onion and garlic. Put whole pepper, onion and garlic in with beans. Add olive oil and bay leave, salt and pepper.
Bring to a boil. Reduce heat to medium and cover. Slow boil for 3 hours or until tender.
You may have to add more water during cooking, just make sure you keep checking them. You also may need to add a little more salt to taste.
Now, here's the key. About 1-1/2 hours before done, take out garlic, green pepper and onion and process in a blender until it looks like mush. Add 1/2 cup of cooked beans and blend
with the garlic mixture. Pour into cooked beans and continue cooking. Discard bay leave and enjoy over rice.
This bean recipe goes really well with pork or chicken.
Note: Black beans do not get as tender as say, butter beans
