Cooked Collards Greens Storage Limit

How far in advance should I cook my collards. I am having a luncheon on Saturday. I want to cook my fresh collards and let the flavor settle in. Shall I cook them tonight (Thursday)? Or, how far in advance and how do I SAFELY store them? I have not room in my fridge with so much other food cooked marinating and waiting to be cooked. I want to put the collards in a cooler of ice. May I???
Please advise. I await.

2-3 Day Stored Collards

All I have to say is AMEN! Just last night I had some collards that have been in the refrigerator for 3 days. They were ABSOLUTELY more delicious than freshly cooked. I think a long as they are stored in the refrigerator and kept very cold for a reasonable amount of time it is alright. They sure were! YUM, YUM!

Cooked Greens Taste Better A Few Days Later

I'm no expert but I used to like them better after they sat in the refrigerator a couple of days. Don't know if that was sanitary or safe but they seemed more flavorful than fresh cooked greens. Never got sick from them so they couldn't be too bad.
