Finger Lickin Good Oxtails by: Anonymous
I do a pre-soak with my oxtails. I soak them in beer and a touch of apple cider vinegar for about 30 minutes. I pre-season and heat the water in the pot. I then season my oxtails before I toss them in the pot. Great flavor and the pre-soak in beer and apple cider vinegar helped tenderize them. I let them cook on medium until they are ready to fall off of the bone.

Wrong or right way to cook oxtails by: Anonymous
When I made my oxtails I cleaned them first then seasoned them. I then put them in the pot and covered them with water and replaced the lid. Then I started boiling the oxtails. Is that a problem the way I made them.

Cooking Tender Oxtails by: Soul Food Chef
I had oxtails for dinner today, so I thought it was funny you should ask the question about cooking oxtails.
My mother prepared today's meal so this is what she had to say.
In a heavy bottom 5 quart pot, add oxtails and cover with water. Bring your water to a boil, and continue to cook oxtails for 10 to 15 minutes.
Remove pot from heat, pouring off the water. Rinse the oxtails with warm water, do the same for your pot as well.
Return oxtails to the clean pot. Cover oxtails with water and bring water to a boil. Reduce your heat to medium and boil for 3 to 3-1/2 hours until tender.
Time to add seasoning, about 1-1/2 hours into cooking your oxtails. Add salt and pepper to taste.
NOTE: You will not be able to boil your oxtails for over three hours without adding more water. Therefore, while you are cooking be sure to maintain enough water in your pot to cover the oxtails.
