Everybody loves some homemade chicken and dumplings, right? If I were you, I'd try the recipe below for a taste of good ole homecooking.
1 whole boiling chicken
salt and pepper
Cut the chicken up into quarters and place in a pot --- cover chicken with water. Simmer the chicken over medium heat until tender. Once chicken is tender, season with salt and pepper to taste. Remove the bones from your meat before preceeding on.
Ingredients to make dumplings:
2 cups of flour
3 tablespoons of baking powder
1 teaspoon of salt
3 tablespoons of lard or shortening
1 egg, beaten well
1 cup of whole milk
Sift together the dry ingredients consisting of flour, baking powder, and salt. Cut in the lard or shortening, mix in egg and milk.
Drop dumplings by spoonfuls into the pot of chicken and broth. Over medium-high heat cook for 15 minutes or until the dumplings are done.
