I make a delicious dish of pigs feet stewed with navy pea beans.
Here goes the recipe for you to try.
5 or 6 pigs feet 2 cans navy pea beans(drained) 2 onion(chopped) 2 garlic cloves(chopped) bunch of parsley chopped or powder form 2 bay leave(cut the vein in the middle,discard)
In a dutch oven put pigs feet and enough water to cover pigs feet, put 1 chopped onion, 1 chopped garlic, salt & peper to taste. Boil for 3 hrs or until bone falls off bone, keep checking water level so that it doesn't run out of water and burn. When done save a cup of this water, set aside. Dump the pigs feet in a bowl discard the rest of water. Use the same pot for the saute. Let the pigs feet cool,& take meat off bones, then in another bowl chop the meat. In the pot use olive oil enough to cover the bottom of the pot Chop 1 onion, 1 garlic, parsley, salt & pepper saute then add pig meat & 2 cans of the beans, continue sauteing, add 1 cup tomato sauce for 1/2 hr should be done. Optional you can add any kind of sausages cook till done. Can use any beans of choice preferably white.
