Do you really want to know how to make tender, drop-off the bone oxtails?
Put oxtails in a pot suitable for boiling (heavy bottom, 5 quart), cover with water. Bring water to a boil, and let oxtails boil 10 to 15 minutes.
Next, pour off water and rinse oxtails with warm water, do the same for your pot as well.
Add oxtails to clean pot and cover with water, bring to rolling boil. Reduce heat to medium and boil for 3 to 3-1/2 hours, until tender. About 1-1/2 hours into cooking, add salt and pepper to taste.
While cooking be sure to maintain an adequate water level in your pot -- enough to cover oxtails.
Tip for thick oxtail gravy:
For a thicker gravy once the oxtails become tender -- pour about 1 cup of juice from the pot into a measuring cup, add 2 tablespoons of self-rising flour, mix well until flour is dissolved. Pour this mixture into pot, stirring well, allow to cooking for a few minutes, stirring often. Repeat if necessary for even thicker gravy.
