The way I fix a hogs head is trim it up, remove the ears, eyes, snout and tongue. Put it in a large pot, cover it with water and cook until it is tender enough to remove from the bone. Mix cooked meat with finely chopped onions, black pepper, salt and sage. Spoon enough broth over the meat to barely cover, and place it in a 325 degree oven for about 30-45 mins.
When ready, spoon it over hot crumbled-up cornbread and serve it with a side of pinto beans.

I have been asked to cook a hog head & black eyed peas tomorrow!! I can do jowls but the only way I ever saw the head cooked was on the outside bbq with a whole hog and there won't no apple in his mouth but, they did leave the eye balls in. Is there a way to cook it indoors within a few hours without a lot of preparation or ingredients?
