Stewing tomatoes simply means to slowly simmer tomatoes until their natural broth cooks down and the entire flavor becomes enriched.
My mom use to do it with canned tomatoes; she'd simply pour a large can of seeded-peeled tomatoes (and their broth) into a heavy-bottomed pan; mashed them slightly with a potato masher or the back of a heavy spoon, add a pinch of salt, generously season with fresh cracked pepper, add a teaspoon of sugar (more or less to your own taste) and sometimes - just for a little zip - a dash of Worcestershire sauce.
Let this simmer uncovered on the stove top for an hour or two over a very low flame. Stirring occasionally until it attains a lovely, enriched flavor.
Someone here also suggested a can of the already "stewed" variety - in my experience, they're okay to cook with; but to eat them alone, I'd still bang them into a pan and do a simplified version of the above to add the peppery, sweetness of the home-stewed version.
