Looking forward to trying recipes

I do not have a memorable story to tell about your recipes because I just found your website. I'm looking forward to trying the old fashioned chili recipe as the weather has gotten cold here in Dayton Ohio. However, I was wondering if you could have the recipe owner post what mesa is? It is referenced in one of the recipes, but I've never heard of it and cannot find it online. From the comments, it looks like I'm not the only one asking.
