When we were kids we didn't have much food so mom
would cook what would go a long way so she would make this dish so that we would also have some nutrition. It was so good I can just taste it now.
Mom's Homemade Succotash
2 yellow squash and 2 green squash (your choice)
1 pound ground beef or turkey
2 cup cheddar cheese, divided
small onion
1/2 bell pepper
small can of stewed tomatoes
2 tablespoons of garlic powder
1 teaspoon of black pepper
seasoning salt to taste
Directions:
Put ground beef or turkey in skillet, add onion bell pepper, salt, pepper, garlic powder, seasoning, cook and stir continuously mixing ingredients together well until brown. Drain some of the oil away from the pan.
Rinse and cut squash into round pieces. Add squash, 1 cup cheese and stewed tomatoes to meat. Let ingredients simmer on medium-low heat until squash is cooked.
Spread the remaining cup of cheese on top, let melt then pour succotash in a bowl over rice.
