I've tried many recipes for chicken breast over the years. My personal goal for grilling it is a juicy inside, and a caramelized outside. Our family's recipe produces just that. We always say we could eat it everyday, at least once! Enjoy.
* 1/3 c. red wine vinegar
* 3 Tb. ketchup
* 2 Tb. white sugar
* Tb. honey
* 1/2 onion(minced+sauteed)
* 3 garlic cloves(minced+sauteed)
* ts.-Tb. Asian chili garlic sauce
* ts. salt and pepper
* 1/2 ts. instant coffee
* 1/4 c. any cooking oil on-hand
Mix all ingredients into vinegar, slowly whisking oil in at the end. Let marinade 12-24 hours. Grill med-heat 20-35 minutes.
I love this recipe because you can make it even without those specific ingredients. You could use any vinegar on hand (white wine, apple cider, even regular! You can substitute brown for white sugar or use tomato sauce, paste instead of ketchup and vice verse. Making it for many, many years with whatever I had, I promise you that this specific recipe achieves perfect results!
