I used to boil them also but when I moved to Georgia, a wonderful southern cook told me to roast those bad boys in a roasting pan on very low heat with a lid. The flavor is amaizing and the color is insane. His gravy is to die for. I simply seasoned them, place a lid on them, placed them in a slow oven 275-300*F for 2 1/2-3 hours or until the are melting off the bone, much like you'd do a chuck roast.You will never boil them again!

The question of how to make oxtails was asked previously by another guest. Oxtails should be rinsed thoroughly under cold running water and then boiled until tender. I usually add tender cooked oxtails to my vegetable soup or eat them with rice alongside some collard greens and corn bread.
