Sweet Potato Pancake Recipe

This is my puffy oven Sweet Potato Pancake with Praline Syrup Recipe.

When I was a little girl growing up in North Carolina, Sunday morning meant two things: going to church and having a big, delicious breakfast! Southern mamas make the best breakfasts, and they never serve cold cereal on the weekends.

One of my best friends mother made a delicious oven pancake that she served with warm syrup. My version uses sweet potatoes and one of my favorite treats - pralines! I hope you love this recipe.

I'm a big believer of always serving both sweet and savory together at breakfast, so I pair this recipe with fresh crisp bacon.

Ingredients:

2 tablespoons butter
3 eggs
1/2 cup flour
1/2 cup milk
1/4 teaspon salt
1/4 cup mashed sweet potatoes
1 cup pure maple syrup
1/4 cup pralines, chopped
6 tablespoons butter

Direction:s

Put butter in a 10-inch skillet. Place in oven that has been preheated to 400 degree for 5 minutes. Beat eggs in mixer and add flour, milk, salt and mashed sweet potatoes. Mix until smooth and throughly combined. Pour into hot skillet and bake until puffed and brown, about 25 minutes. Stir maple syrup and pralines together in a small saucepan and heat on stove until warm. Slice puffy oven pancake into 6 slices and serve with praline syrup and 6 tablespoons butter.

Yield: serves 6
